Rava Dosa

Tasty, Crispy dosas with rava....If u want something nice and quick for breakfast, this is for u.....I often prepare this and I love it...No soaking, no grinding and no overnight fermentation....


 

Ingredients:

1cup semolina (rava)
1tbsp yoghurt
1/2 cup rice flour
1tbsp chopped coriander leaves
1tbsp chopped green chilli
salt (as per taste)
1 1/2 cup water

Method:

1. Make a batter with all the above ingredients. Batter should not be too watery.
2.Heat a pan and make dosas.

Strawberry Pudding

Two weeks back , I visited Mahabaleshwar. Well for those who don't know about Mahabaleshwar, its a hill station in Maharashtra,  located in western ghats. It is a popular holiday and honeymoon spot. Splendid climate and many streams make this place special.  After 3hours of drive, we reached our destination and we were so happy to see our resort...Forestvalley Resort , as d name suggests this place gave us a true nature experience...we stayed in a wooden cottage and could hear d birds chirping always and the sight of little streams was awesome..From d resort we can have a walk to d nearby strawberry n mulberry farms..This place is famous for strawberries and honey. So how can I go without buying?? Did little shopping in market and  got few friends over there...This trip gifted us many breathtaking sights. Enjoyed every moment of it...


 
 




  Recipe for strawberry pudding...

Ingredients  :

6-8 no Fresh strawberries 
Strawberry crush (optional)
2tbsp sugar
4tbspCondensed milk
1/2 cup milk
1 cup bread crumps
 
 Method :

1. Boil milk in a saucepan , add sugar and stirr well.
2. Add condensed milk and bread crumps. Cook for 2mint.
3. Cut strawberries into small pieces. Take a separate pan and cook strawberries with little amount of water. add strawberry crush and cook for about 5mint.
4. Once strawberry gets cooked, add strawberry syrup to milk and stirr well.
5. Transfer to a bowl and keep in refrigerator for about 2hours.

Note : Garnish with fresh strawberries and serve...

Peach Delight

Looking forward to this weekend because we are planning for a trip to Mahabaleshwar, land of strawberries... Hopefully I will bring a box of strawberries from there.. So expect a strawberry recipe next week :)




 When I got some fresh peach , first I didn't have any idea what to make.. Eating as such is not a bad idea... Because I like eating that way, but for M I had to think something different ..I put my thinking cap on and started preparing jam out of it...In the middle I was struck with a new idea and I named it as Peach Delight coz this made me smile:)

 
Really so soft, fluffy , so tasty and so delicious.... Best for your sweet cravings , I will say that...especially on a heavy rainy day ( like today) sipping a hot coffee and having a piece of Peach delight.. I can't ask for more...I love the aroma of cardamom and added a pinch of crushed cardamom in to that.. Heavenly aroma of cardamom filled in my kitchen... I am loving  this !!!!

This is a really simple recipe, but I am sure it will definitely awake your sweet buds:)

Ingredients :

1cup Fresh Peach , sliced
Powdered sugar 2 and 1/2 cup
All purpose flour  2 cup
Baking powder  1tbsp
Eggs 2
Butter 2 tbsp.
oil 1tbsp
Crushed cardamom 1tbsp
Chocolate syrup (Optional)

Method :

1. Put the flour in to a mixing bowl . Add butter and mix well. Add 1tbsp oil also.
2. Break eggs in to it and beat well.
3. Add 1 and 1/2 cup powdered sugar and 1tbsp baking powder and beat well. add crushed cardamom also.
4. Keep it aside for 10 mint.
5. Heat a pan and add little water and sliced peach. Cook for 5mint. Now add remaining sugar and melt it. Cook until you get a jam like consistency.
6. Take a deep pan and grease it with butter . Pour half of the flour mixture slowly in to pan.
7. Now layer peach sugar mixture on top of this and cover with  rest of the batter .( If you want make circles with chocolate syrup, this will give a better appearance).
8. Close with a lid and cook for about 10 mint.

Spinach Lentil Soup

 
 
Well....this is one of my comfort food. Spinach lentil soup....Easy to make n tasty n refreshing....Hubby is not so fond of this one. But I am !!!!!
Try this atleast once and I am sure you will fall for this.....

Ingredients:

1 cup lentil
1 cup spinach chopped
1tsp garlic crushed
1tsp ginger crushed
Salt (for taste)
3 cups water
1tsp turmeric powder
2tsp Oil

Method:

1. Heat oil in a deep pan and add chopped garlic n ginger. Saute for a minute.
2. Add turmeric powder n chopped spinach. Add water. Add a pinch of salt also.
3. Once water starts boiling add lentil and close it with a lid and cook for about 20minutes.

I love having this in a rainy night...Try this:)

Chicken cutlet



I am so happy to share this recipe because this is my “signature dish”…Chicken cutlet it is!!!!!!  I started my cooking experiments by preparing different cutlets…I used to give demo preparations  for our family friends…I am so confident of this one and you give me anything whether it is vegetable, fish or meat, I will make culet out of it!!! So here I present my favorite chicken cutlet recipe….

Ingredients :

Minced chicken    - 1 cup
Onions(chopped)   - 1 cup

Ginger (chopped)   - 2tsp
Two Green chilli (chopped)

Red chilli powder  - 1tsp

Salt                           -  2tsp
Mashed potato       3cups

Bread crumbs      - 1cup

Eggs                     - 2

Method:

1.       Mix mashed potato, chopped onions, green chillies, ginger ,salt and chillipowder.

2.       Add minced chicken with potato mixture.

3.       Take small portions and make in to cutlet shape.

4.       Dip this in beated egg and cover with bread crumbs.

5.       Heat oil in a pan and deep fry cutlets.

Note :  Garnish with chopped coriander leaves and serve with suitable dip

Homemade Gooseberry wine

 
 
I grew up watching my Mom preparing grape or gooseberry wine for Christmas...She used to plan atleast 4 months before and did the fermentation properly...Me n brother used to wait for the "wine opening day"...Recollecting all those childhood memory, this year i wanted to have gooseberry wine on Easter...Unlike my Mom , i got this plan just 3weeks before...I didnt have much time , still i wanted to give a try...Gooseberries are good candidates for wine because we get a stronger wine in short period:) Usually wine is prepared in large clay pots called "Bharani" But i dont have it right now..So i prepared wine in normal glass and plastic jars...
Gooseberry wine was the star in my Easter lunch:)

Ingredients  :
 
Gooseberries       - 1kg
Sugar                  - 1kg
Yeast                  -  1tsp
Water                  8cups
 
 
Method :
 
1. Wash gooseberries n wipe with  a clean cloth.
2. Put them in to a jar (glass or plastic ) .
3. Boil water and after cooling it to room temperature, half fill the jars.
4. Add half of sugar directly in to jars.
5. Heat a pan and melt rest of the sugar n turn them brown in color.Add 2tsp water. Pour this in to jars.
6.Add 1tsp of yeast in to jar and give a good shake.Close the jar tightly n dont open for the next 3days.After that gently open and release carbon dioxide..Repeat this often n finally take it out after 3 weeks and strain out the gooseberries and collect the tasty wine:)

Pesaha Appam or Passover Unleavened Bread

 
This year i wanted to prepare "Pesaha Appam" for the very first time in my life..This is commonly prepared by Syrian christain community of Kerala only on Maunty thursday...Head of the family prays , cuts the appam and share it to all the family members...Being a marthomite, i never had a chance to experience this tradition..But this time i didnt want to miss this:) Actually Pesaha appam is also called "Indri Appam" and i had told Hubby that this year i am going to make it...He got that name and kept on reminded me about "Indri Appam"...Finally i made it...yuppiee:)


Ingredients  :

Rice flour   -  1 cup
Urad dal     - 1tsp
Shreded Coconut   - 1/2 cup
Garlic pods      - 3
Cumin seeds   - 1tsp
Salt
Water 

Method :

1. Mix rice flour with water (1cup) , add a pinch of salt also. Keep this aside.
2. Grind soaked urad dal with shreded coconut, garlic pods and cumin seeds..
3. Add this mixture into rice flour mix and make it like an idli batter.
5. Pour this batter in to a greased pan and steam cook for 15mint.
